The cold chain is vital for ensuring the quality of food and pharmaceuticals. Although an age-old technique, recent technological advances enable businesses to guarantee the integrity of goods at all stages of logistics. This article explores how the cold chain works, its applications across industries, and how to maintain it properly.



What is the cold chain and what is it used for?


The cold chain is a set of processes and procedures designed to maintain controlled temperatures throughout the supply chain. It is used to ensure that heat-sensitive products retain their properties, preventing spoilage or bacterial growth. It is essential for the storage and transportation of consumer goods such as food, pharmaceuticals, cosmetics, and laboratory products.


To keep the chain unbroken, different temperature ranges are used depending on the product. Deep freezing is ideal for specialized vaccines and biological samples. Freezing is suitable for products such as meat, fish, ice cream, and vegetables. Supercooling is ideal for high-quality fresh fish and seafood. Standard refrigeration equipment is commonly used for dairy products, fresh meat, cured meats, delicate fruits, and vegetables. Finally, controlled cooling ensures the stability of vaccines, insulin, medications, and other biological products.


How the cold chain works


The cold chain in logistics can be divided into three main aspects:


Cold storage. This requires logistical facilities such as storage rooms built with sandwich panels. They are equipped with cooling systems, including compressors, condensers, expansion valves, and evaporators to control temperature. Racks specifically designed for this purpose, such as those from Mecalux, are made of stainless steel to withstand extreme low temperatures.


Transportation. Heat-sensitive food and products must be transported in refrigerated vehicles to record temperature. This ensures that goods arrive at their destination in optimal condition.


Temperature control. This monitoring must cover the entire chain from origin to final destination—whether at distribution platforms or points of sale.


The application of cold can slow the growth of microorganisms such as pathogenic bacteria. However, cold cannot eliminate bacteria that are already present, so the cold chain must be maintained until immediately before consumption.


A break in the cold chain can lead to property loss, compromised effectiveness of medications or vaccines, and even serious health risks for consumers. For example, thawed food can only be refrozen if it is cooked at temperatures above 70°C. Otherwise, the cold chain will be broken, potentially compromising food safety.



Cold chain regulations


Although there is no single regulatory body issuing regulations for maintaining the cold chain, various organizations and institutions have established standards and regulations. These vary by industry or country, and compliance is mandatory.


One of the most well-known management systems for ensuring food safety is Hazard Analysis and Critical Control Points (HACCP). To ensure that events such as cold chain breaks do not affect products, the HACCP process analyzes risks, defines critical control points, sets values for each point, establishes monitoring systems, and implements corrective actions when necessary.
