The indicator system for evaluating blast freezer performance is rigorous, mainly covering the following key dimensions:

I. Temperature and Cooling Rate Indicators
This is the core performance parameter of a blast freezer. The internal temperature of a blast freezer is typically required to be between -35°C and -25°C, with some high-demand scenarios even reaching as low as -45°C. In terms of cooling rate, advanced technologies such as liquid nitrogen freezing can achieve typical cooling rates of 7-15°C per minute, which is 30-40 times faster than conventional freezing methods. For meats, seafood, and other ingredients, a cooling rate of ≥10°C/min is usually required to ensure that the core temperature of the food drops to -60°C within 15 minutes, effectively locking in cellular moisture.
II. Temperature Uniformity and Airflow Distribution
The freezing effect depends not only on the low temperature but also on the uniformity of temperature within the chamber. Under no-load conditions, the maximum temperature difference among all temperature measurement points should be controlled within ≤1.5°C (some high-standard requirements specify a temperature difference of ≤3°C between points inside the box), and the temperature fluctuation during stable operation should be ≤0.5°C. Additionally, the airflow distribution must ensure that the wind speed difference across all zones is ≤0.2m/s, the return air short-circuit rate is ≤15%, and the area of airflow dead zones accounts for ≤5% of the total chamber volume, ensuring that cold air can uniformly penetrate the goods.
III. Chamber Structure and Insulation Performance
To maintain low temperatures and minimize cold loss, the enclosure structure of a blast freezer has high requirements. Its heat transfer coefficient (K-value) should be ≤0.25W/(m²·K), typically using polyurethane insulation panels with a density of ≥40kg/m³. Additionally, the airtightness of the chamber must pass strict testing, with an air exchange rate of ≤1.5 times/h under a pressure difference of 50Pa, and the pressure difference should be controlled within ≤5Pa to prevent the infiltration of external humid and hot air that could cause frosting.
IV. Humidity Control and Frosting Indicators
Humidity control directly affects refrigeration efficiency and food dehydration loss. The relative humidity deviation in a blast freezer should be controlled within ±3%RH of the set value. The frost accumulation on evaporator fins must be strictly monitored, typically requiring a 24-hour frost accumulation of ≤12mm to 15mm. If frost becomes too thick, it can significantly reduce refrigeration capacity. Therefore, the defrost cycle and the drainage temperature after defrosting (which must be ≥8°C) are also key evaluation points.
V. Equipment Efficiency and Food Quality Evaluation
At the equipment operation level, the coefficient of performance (COP) of the refrigeration system should be ≥2.8, the compressor discharge temperature should be ≤135°C, and the oil separation efficiency should be ≥99.5%. At the final output level, the effectiveness of the blast freezer is evaluated through the drip loss rate, texture, color, and flavor retention after thawing. For example, using high-quality blast freezing technology, the drip loss rate of beef and mutton after thawing can be significantly reduced from 15%-20% (with traditional freezing) to below 5%, achieving a taste close to fresh meat.
